Cinnamon Doughnuts

If you don’t love a still-warm cinnamon doughnut, then we can’t be friends anymore. Make these traditionally deep-fried treats much healthier by baking them instead.
Ingredients
- 3 eggs
- 1/3 cup sour cream
- 250mL milk
- 1 tsp vanilla extract
- 125g butter, melted & cooled
- 1 tsp baking powder
- Pinch salt
- 75g brown sugar
- 300g plain flour
- 2 tbsp cinnamon
- 120g sugar
Method
- Preheat oven to 180°C and grease a 12-hole doughnut tin.
- In a large bowl, whisk eggs lightly, add sour cream and whisk to combine.
- Add milk, vanilla and melted butter. Mix well.
- Whisk in baking powder and salt, mix thoroughly.
- Mix in brown sugar and then flour, mixing until smooth.
- Spoon or pipe into doughnut tins and bake for 20-25 mins until pale golden.
- Cool in pan for 5 mins, then remove to a cooling rack.
- Mix cinnamon and sugar in a small bowl.
- Working 1 at a time, brush warm doughnuts on both sides with melted butter, place in the bowl of cinnamon sugar and coat well.
- Enjoy while still warm.
